Supply of asparaginase 4-less acrylic in larger quantities in a high-purity and food-safe formulation

c-LEcta has reached an important milestone: the asparaginase 4-LEss Acryl can now be directly supplied in larger quantities in a high-purity and food-safe formulation. The enzyme is produced in a GRAS-status microorganism. 4-LEss Acryl reduces the formation of acrylamide in food such as coffee or corn flakes. Additional applications can be found in the production of food made from potatoes. The addition of the enzyme before the food’s exposure to high temperatures reduces the formation of acrylamide by 50 percent, and in some cases, by more than 90 percent.
